So how do I identify meat cuts?
Whenever I ask the butcher about a certain meat cut he looks at me like I have grown an extra head.
I've looked at several pictures online about what a meat cut look like and none look like the ones I see at my local butcher.

Make a journal and buy one of everything they offer over the next year. Look up the best way to cook each, try it, take pictures, and post your blog here. Sure, everyone will call you a faggot and such but you and /ck/ will be better for it.

Im no expert but chuck is supposed to be one of the worst cuts so avoid that. Sirloin, tenderloin, top and bottom sirloin are all good. Those would be my go tos.

What the fuck? Chuck is one of the greatest cuts. It’s basically the pork shoulder of beef. Educate yourself.

I live in a 3rd world country and every butcher went to have no idea what Sirloin and Chuck is.
All they now is Leg, side, chest, neck and so on

That's why you use it in stews.

Even in Germany many butchers don't know all those meme cuts.

It is very affordable and very flavorful, truly and tragically underrated. You know how every youtube faggot is a brisket whore now? Chuck is far, far superior for anyone who doesn’t have 12 hours to spare.

Sounds like your butcher is a shitty butcher.
If he cant describe the cuts dont give him business.

It’s not like round, fatless and terrible, but it’s also a working meat but flecked with fat and with insane flavor. Is it good in stews? Yes. Is it a stew meat? No.

I've been to several butchers and none of them know cuts. Even major Chains like Carrefour butcher have no idea what I'm talking about.
"So do you want the leg or the side"?

You can always buy a cow and butcher it yourself

butcher? or some guy behind the meat counter at the local supermarket? most supermarkets no longer have actual butchers anymore.

This.
I grilled the guy behind the counter about the source of some cubed beef on display, he told me that the meat comes pre cut and all her did was to cut it/grind it into portions. He showed me the wrapper the meat comes in, it had nothing on it except "Child Brazillian" written on it with a sharpie

You live in a non-english speaking country? Most meat cuts don't translate 1:1 from english.

Yes. But even when I show them cuts on my phone they have no idea what it is.

The western world simply wouldnt know how to deal with that, we've had proper butchery for at least 100 years.

That explains it. Only Brits and Americans should be allowed near beef, the unwashed hordes can’t handle the responsibility.
