if the burger has no cheese and all of the vegetables mayo is customary
if the burger has cheese and no leafy vegetables mayo makes it too saturated and you should go for mustard instead
if the burger has all of the vegetables plus cheese you can do a little mayo and a little mustard because the greens break up the saturation

Mayo is probably one of the biggest condiments you'll see recommended by any chef on a burger. Usually they have to do something else to it, usually adding ketchup, dijon, relish or pickles, fish sauce, and some spices like garlic, onion, paprika. It'll usually just get called a burger sauce at that point. Big Macs or In-n-out spread are examples of that.

When I dine out, I order my burger with lettuce, tomato, onion, pickle, and mayonnaise. When I make it at home, I use mustard, onion, and pickle since lettuce and tomatoes are a bit of a pain to keep on hand. I like to use dehydrated onion flakes and soak them in water overnight and drain. Pickles last years unopened and months once opened. Same with mustard. Buns and ground beef both freeze pretty well. If you live out in the boonies like I do, then making trips to the store is inconvenient (if not down-right impossible during certain parts of the year) and you've got to learn how to keep things. But when you dine out, it makes sense to have another go-to.

I usually get mayo at restaurants. At home, mayo mixed with shallots, brine, diced up pickles, pepper, and a little ketchup makes for a great burger sauce. I'll only put it on if the burger doesn't have cheese or another rich topping such as purple onion marmalade.

Not quite as fancy as that but when I make burgers at home I make discount Big Mac sauce, while the burgers are cooking I just spoon some mayo, dill relish, and mustard into a small bowl and mix it up

Takes like one minute and washing a little bowl and spoon extra is worth it for a tasty sauce
