Potato salad:
>boil a couple pounds of red potatoes until easily pierced with knife, drain and allow to cool
>in a large high walled skillet cook four or five pieces of thick cut plain bacon until slightly crisp
>remove bacon, add one half of a chopped yellow onion (not sweet) to bacon fat and cook till clear
>turn off heat
>chop bacon and add to skillet
>roughly chop potatoes and add to skillet
>toss
>make a sauce out of three parts German mustard (usually about 3 tablespoons), two parts apple cider vinegar, one part olive oil, and plenty of black pepper and salt
>whisk sauce and toss into salad
>top with freshly chopped parsley and serve warm

Jägerschnitzel Sauce
>fry half a chopped yellow onion in butter or fat
>once sweated, add sliced garlic
>sauté for a minute and then add 16 oz of washes and sliced mushrooms
>cook most of the moisture out of the mushrooms
>deglaze with half a cup of dark beer
>add a cup of beef stock
>reduce sauce and thicken to taste with white flour
The Schnitzel
>flatten pork chops with meat mallet
>make sure they’ve been out of the fridge a while it fucks it up when they’re too cold
>season with salt and pepper and if you like paprika
>coat in flour, beaten eggs, and unflavored breadcrumbs in the order
>fry for 3 to 4 minutes on each side in vegetable oil
>serve with sauce

My local Oktoberfest was cancelled, so instead I'm going camping in Georgia. It's funny, Appalachia is mostly Scots-Irish, not exactly the best place for German food but oh well.

Okay I don’t really cook sweets but I can make a trailer park strudel, just buy the pastry dough and fruit
>finely chop up sour apples and toss with raisins, chopped walnuts, lemon juice, sugar, and cinnamon
>lay out a sheet of the pastry dough and roll it thin
>brush with melted butter
>lay out the filling in a line about half and inch from one end
>Roll up like a loose burrito
>score the top of the strudel and brush with more butter
>bake at 350ish until golden brown
>Remove, top with confectioners sugar and serve with unsweetened whipped cream, just heavy cream whipped in a blender
