Where are you from? If there are Mexicans there, then there are definitely Mexican bakeries. They are usually inside either bodegas or hispanic grocery stores. Look up “panaderia” on your local maps. Buy some of pic related, extremely based cinnamon molasses bread.

introduce nonsweet nonfried wheat breads. you can bake more than cakes and tortas and tortillas. Spanish tapas have breads constantly, just substitute in those types into I'd imagine a lot of street and sea food.

Two major problems i see the proofing of the bread and they dont taper/stamp the elotitos properly. They make them too fat on the ends where they end so they dont get a good crunchy texture on the ends. The weak stamping fails to create the crispy edge that makes that bread different.
