Steel is hard but also tensile, so it can bend and get hit without breaking. It's also not hard enough that you can't sharpen it with something harder (ex:ceramic!), but it's obviously harder than anything you'll cut.

Ceramic is hard, but that's all. It's too hard to be sharpened easily, and it's brittle so shocks will break them. It's like saying glass cuts better than most normally sharpened steel knives. It's true, but you're overlooking everything else that makes it an unpractible tool.
