FYI, scooping out with a spoon was actually the traditional way to serve a number of cheeses, including Stilton and Cheshire. Afterward, you would fill the hollow with fortified wine (Sherry, Port, Madeira, etc.) so that it wouldn't dry out. But then the snobby connoisseurs (the same sort who don't think you should eat crackers or fresh fruit with cheese, as was also traditional) started complaining about that affecting the taste of the cheese.
