Why should I should I caramelize onions on low heat for an hour when I can achieve the same effect on high heat in 15 minutes?

Every time you do it on high heat, someone you know gets killed. Over the course of a few years, you could easily wake up to find all of your loved ones, friends and enemies dead. You'll be completely alone. You might think that's a good thing. You might even hope you die next. But it'll never kill you - it'll kill the next person that was supposed to become a part of your life before you ever meet them. Do you want to be alone, anon? Do you want to meet nobody, ever? Even the shopkeepers you buy your onions from will fall victim to this, until you can't even buy those onions to caramelize anymore.

yes there is. every vegetable has some amount of sugar.

you can do caramelized onions over higher heat if you add a little water once they start sticking each time but doing it properly over lower heat still produces the best results and full caramelization. with higher heat it might just be more on the surface and not with the onion completely broken down and caramelized.

Onions contain fructans, which are polysaccharides made from fructose.

Our body has problems breaking down fructans - that's why you have to fart if you eat larger amounts of (raw) onions. This is not to be confused with why your farts stink (the sulphur components in the onions are responsible for that).
