I make some pretty good chicken fajitas.
Put sliced chicken breast and sliced red and green peppers in a plastic bag. Add a little veggie oil, siracha, lime and fajita seasoning. Mix it all up and get a cast iron screeming hot. Toss it in the pan and stir fry it. You will get a nice carmellazation quick

I don't use one but I'll post my method for this batch.

1.5 lb pork shoulder, cut up
1 lb hot Italian sausage, removed from casing
1 large yellow onion
1 head of garlic
2 large carrots
2 ribs of celery
2 28 oz cans San Marzano, squeezed
Salt and pepper

Season the pork shoulder and brown it on all sides, set aside. In the same pot add the sausage, onion, celery, and carrot, and fry until the sausage is cooked and vegetables are softened some. Add the garlic last and cook for a minute or two. Finally add the tomatoes, bring the pot to a bubble, then simmer at low heat, uncovered, for as long as possible, until the meat is tender and the water has evaporated from the tomatoes. I did about six hours. Note that if the sauce becomes TOO thick, just add a little water, scrape the pot down, continue cooking.

There are a million and one variations and alterations you can make here. Wine, milk, bay leaves, other/more meat, tomato paste. The main key is low heat for a long time, and let that water evaporate. There's nothing worse than a watery tomato sauce. I served it with rigatoni and ricotta.

I've done it with beef chuck, beef short rib, ground beef, ground pork, oxtail. You could do lamb. You could throw in some cured meat, or some pancetta. Just be careful of the salt. Ragu is a great way to clean your fridge of leftover meat. If you are just starting out making tomato sauces, do something simple. Cook some onion and garlic in olive oil, then add some tomatoes and simmer for a while, tasting it every hour or so until it's as thick as you like. That's your baseline. From there you can add more ingredients and flavors. I like to crush the tomatoes with my hands.

Made this wellington a while ago out of what I think was a bottom round instead of tenderloin
I thought it came out pretty nice, if maybe a bit on the medium-well side

I'm currently trying to make a sourdough starter with wild yeast (I made a thread about breadmaking a few days ago), but all it's ever doing is forming small bubbles after 2 weeks, not forming the webby/crumby dough-like/honeycomb structure I keep seeing in images, so I don't know if I can even use it for bread yet.

Another thing to bear in mind, and this is logical but you may not have thought about it, is that if your sourdough is too wet it won't be able to rise and maintain that structure you're looking for.

Why isn't there a more perfect pan for cooking eggs? I made pizza in this yesterday, scraped off any burnt cheese bits with a spoon, washed with dish soap and a sponge, then just now cooked up some kale and sungold tomatoes in .5 T of grapeseed oil before doing these eggs in the pan as is, no more oil added.

Something random from vegetables and spices.

Sauted garlic, ginger, onions, brown mustard seeds, red and green paprika, and cucumber. After that I have added some garam masala, curry powder and harrissa powder, sauted a bit more and finally added a small amount of tomato juice, let it simmer for 5min and that was it.

Flatbreads were basic: water, flour and some yeast.

It was a good fill.

Cooked the chicken and mushrooms in beef stock, added red thai curry paste, 1/2 cup of brown sugar, pinch of MSG, ginger, garlic, and salt, then tossed the broccoli in at the end. Removed everything from the pan and put it on a bed of rice, then let the sauce reduce into a glaze and poured it over. Delish.
