I think you're missing smoke and a bit of char, but I can't fault the ease of crock pot or sous vide pulled pork.

I own a big fat sousvide/slow cooker thing. It's pretty shit and very slow to heat up, and I rarely use it because of that. The food though is absolutely to die for when I do use it. Steaks, Chicken, etc are great with it. At some point I think I'm just going to sell my old one or toss it and buy a fancy anova or one of the other smaller cylinder brands because space is another issue of mine. It's way to fucking big. I regret not just going with anova originally.

Your bark will be too thick and the meat will be dry on the outside until you get further in. If you like it extra smoky, I guess it is better for you. You can't make it as perfect in a smoker. It will be really good, but no where near as tender and succulent.
