Do you mean at the end when they flip them with a stick? Traditionally, it was just a chopstick, but they make metal skewers you can use now. If you mean the ones that just start spinning on their own, there is no mechanism. If the pan is oiled properly, the excess batter is removed, and there's a heavy filling, then they'll sometimes do that on their own as they cook.
