Other people make a dish and it uses widely different methods and components, yet they still call it carbonara. That is why they are angry, they do not care if someone makes a dish with smoked bacon instead of guanciale or even pancetta, they do not care if they use parmesan instead of pecorino, add peas, cream, etc. The problem arises when they do these things and still call it a carbonara. There is no need to improve something that it's already perfect and healthy in its simplicity.

When you live in a country that no one really gives a shit about, has 0 impact on the world, and does not really do anything useful, you tend to find something to hold on to.
In the case of your average Italian, they held onto their cuisine, and if you dare put 0.02 grams of salt more than their great-grandmother did, you'll be sent death threats.
It's a sad state of affairs, but you can't help but feel sorry for them and give them the bit of attention they so desperately seek, like giving scraps of meat to a stray, really.

Almost every situation of Italians complaining about food could be avoided if americans (and brits) were more honest with the names. It's like Ramsey's carbonara: it's not a carbonara, give it another name.
