Got some potatoes with as little starch as possible
Peel them
Cut them fry-shapes
Put them in water
Store overnight in fridge
Next day drain water and dry fries with cloth or paper towel
Heat up oil or fat (best is ox-fat) to 120°c
Bake a few minutes
Take out the fries and put them on a draining rack
Heat up oil to 180°c and fry again untill golden
Take out and salt
Have delicious fries

Simple as that, yours just looked like the were baked too long in a temperature that's too low in fat that's too old

Only bittersweet memories. There are no greek restaurants near me. I used to get one gyro a year when we went to the county fair and sought out the one greek food stand they had there. They did them up real nice, carved to order, and absurdly generous portions, particularly given how badly most vendors at a fair will screw you. We'd split a single gyro among us and have us a real nice meal. Then the vendor got bought out by one of those annoying EXTRA BIGASS DEEPFRIED PEANUT BUTTER-BATTERED FRIED CHICKEN-STUFFED DONUT BURGER places that already had multiple locations around the fair every year anyway, and now I never get to have gyros anymore unless I want to spend 45 minutes to an hour on the road.

Basically, I minced a pound of lamb and a pound of beef together in a food processor. Used rosemary, italian seasoning (oregano, basil, etc.), cumin, marjoram and a couple cloves of garlic and diced onion and processed that with it.

Baked the meat in a loaf pan inside a water bath pan for about an hour and cut it into strips. It's fairly easy to do, my autism slightly panicked when I saw I had to do that bath shit.
