Got the oil and spices on the pan. Added the onions and potatoes and spread it all around. One last round of seasoning on top, and it'll be back in. The core of the meat still pretty hard, so it is probably still frozen. I'll keep it at 200°F for another 30 to 60 minutes before bumping it back up to 250°F.

What you should have done:
Thawed meat either leaving it out or in a bowl of water.
Preheat oven to 375F.
Cook half hour or more, flipping everything over at least once.
If you think it's done slice it and check.

To cook anything, literally ANYTHING, you need to have it at a temperature vastly higher than the temperature you want it at because of how pressure and thermodynamics work. don't know why he's mad but consider this: in the oven you're not trying to thermally equilibrate the entire loin, it will take a long time and not provide the desired texture on the outside.
sous vide is the way to reach equilibrium, and you'll still have to sear it to get the outside right.
