Depends. If nobody's watching, just bite the cheese strings and sever them with your teeth. If you're in public, you'll have to use a fork or something. Actually if the toppings aren't likely to slide off, I also like to rotate the slice to wrap the strings around it like a spindle. Then eventually the strings get too thin and snap on their own.

When I buy pizzas I put a knife out with them so people can cleanly cut troublesome slices without putting their fingers all over everything. Also allows for fractional slices if that is your jam.
