Get yourself some dried Mexican peppers. Guajillo, Ancho, Arbol are my favorites. There are others. Put balsamic, or red wine, vinegar in it heftily. Use Coriander and Cumin. Use Tarragon and Culantro.

cuisine changes as spices are discovered. early chili is literally just a tomato meat paste and has a couple of spices. people just use what they had available. chili is like succotash. you often just throw in what you have and it changes with seasonal ingredients, especially back in the day before modern supply chains. even alton brown's retarded crushed up corn chip recipe uses cumin.
