I'm going to buy a vacuum sealer so i can start cooking sous vide

Do you think a more expensive vacuum sealer would be worth it? Or should i get a cheaper one? After all it's just a vacuum pump and a hot wire to seal the bag.

This will be my first vac sealer, so tell me your vacuum sealer secrets anons.

Go for a good one. Same goes for the bagging. I cheaped out on some of the plastic recently and it doesn’t seal properly, meaning vacuumed meat spoiled.

If you have the freezer space, a vacuum sealer will revolutionize how you buy meat. I’m not sure where you are, but in Germany, I buy meat at Metro. You have to own your own business to shop there, and it is aimed at restaurant owners. Bulk buying means that meat costs 40% what it costs in standard stores. Plus, I buy meat that’s nearly past its best before date at a 50% discount on top of that (although I wouldn’t do that with chicken).

Can’t be fucked to list what I have in the freezer, but on any given day me and the missus can just spontaneously decide to have roast guinea fowl, steaks, liver, octopus, schnitzel, calamari, duck confit etc. on a whim. Everyone who knows us thinks we spend a fuckton of money on luxurious food. Truth is, those dumb faggots spend 25 Euros on a Greek takeaway for two, while we’re eating a 2 1/2 pound tomahawk steak dinner for 6 Euros a person. All thanks to her vacuum sealer and our giant freezer.

Every conventional plastic releases endocrine disruptors in your food - especially if you heat it up or use fats, retard.

“Almost all plastics leach endocrine disrupting chemicals, BPA-free onces partly even more”
>Results: Almost all commercially available plastic products we sampled—independent of the type of resin, product, or retail source—leached chemicals having reliably detectable EA, including those advertised as BPA free. In some cases, BPA-free products released chemicals having more EA than did BPA-containing products.
>Conclusions: Many plastic products are mischaracterized as being EA free if extracted with only one solvent and not exposed to common-use stresses. However, we can identify existing compounds, or have developed, monomers, additives, or processing agents that have no detectable EA and have similar costs. Hence, our data suggest that EA-free plastic products exposed to common-use stresses and extracted by saline and ethanol solvents could be cost-effectively made on a commercial scale and thereby eliminate a potential health risk posed by most currently available plastic products that leach chemicals having EA into food products.

Agree with this. Freezing meat is so handy. I will sometimes cut up my meat into the size I want it like for stir-fry and it makes preparing easier once defrosted. I actually can't believe how long stuff lasts too. I have eaten meat that was frozen more than 12 months and I thought it would be crap but it tasted 100% fine.

vacuum sealing makes food last longer and fresher in a fridge, but does it have any effect during room temperature? for example say i cook myself a chicken breast with some rice and sauce and then vacuum pack it and put it in my backpack when i go hiking. will it last longer than it would just carrying it in a topper ware?

That is a whole different can of worms.
Vaccum sealing greatly slows aerobic bacteria (yeasts, mold, fungi) as it kills the air (aero) that they need to grow.
Anaerobic will still grow just fine. e.coli and such.

So as long as you cook things properly, cool them sufficiently and keep things sterile while doing so it should be fine, but still try to keep things out of the danger zone and use within a reasonable timeframe.
In rice Bacillus cereus is the main worry and it is Anerobic. Even if you cook it properly.
People get sick off reheated rice all the time.

You're just too pampered. I slaughtered my first pig with a hammer and knife at 12. Make it at somethig out of a bucket alone, bash it's head with one clean strike, slash throat instantly while it's out, catch the blood for sausages. Afterwards hang it on backlegs onto a roof and flame off the hair. Gut the pic. Cut the whole pic in two starting at the ass towards the head. Let it hang. Cut into portions.

If you live on a farm you have to do it all. Castrating the piglets, quick and dirty (no anastesia), too. Imagine thinking tha being unable to provide for yourself is a virtue. You're like a baby.

I've got the FoodSaver brand and I've used it so much it's starting to wear down a bit but it's paid for itself at this point, if it breaks I'll be replacing it.

>I'm going to buy a vacuum sealer so i can start cooking sous vide
If you said that you were buying a sealer machine to section your own cuts and store them in your deep freezer w/o freezer burn, okay. If you live in Alaska and hunt your ass off during salmon season, bear kills, storing your trufles, ramps, black walnuts, your stone crab season limits, your summer crop canning, and lived remotely, flying your precious food in. It's not a bad method to rewarm leftovers in boiling water, either. People like them, but they know the hidden costs exist. Namely, the bags are quite a bit thicker, BPA free, and that price is now built into your portions, one expensive bag at a time.

Sous vide, however, is a lazy restaurant trick for people doing meal prep and putting trendy shit on their menu to compete in a low profit margin world, avoiding waste and budgeting time during times of service. I don't find it worthwhile. You'll likely enjoy playing with your toy of the month after a few recipes come out nicely, so go for it though! You'll soon tire of it, likely.

Sous vide machines are great for warm baths of salt-rising dough and yogurt, fyi. If you have some cultural food obsession, you might enjoy it for their recipes of custards, steamed puddings, and bain marie kinds of applications.

“Non-stick kitchen utensils reduce T, penis length, semen quality and testicular size”
>We found that increased levels of PFCs in plasma and seminal fluid positively correlate with circulating testosterone (T) and with a reduction of semen quality, testicular volume, penile length, and anogenital distance. Experimental evidence points toward an antagonistic action of perfluorooctanoic acid on the binding of T to androgen receptor (AR) in a gene reporter assay, a competition assay on an AR-coated surface plasmon resonance chip, and an AR nuclear translocation assay.

“PFC (Teflon) leads to fertility problems”
>Polychlorinated biphenyls (PCB) and perfluorinated compounds (PFC) (commonl known as Teflon) are chemicals that only break down naturally to a very small degree and therefore have a strong tendency to accumulate in the environment. While PCBs are known to be environmental pollutants and have not been legally produced since the 1970s, the use of many PFC variants is rapidly increasing in products such as water-resistant clothing and coatings in saucepans and frying pans.
>Marianne Kraugerud's thesis shows the effects of PCB 118 and PCB 153, which are two separate PCB variants with different chemical characteristics. In lambs exposed to these substances while in the womb and via their mother's milk, effects were demonstrated both on the formation of egg cells in the ovaries and on the hormones that control the function of the ovaries in female lambs. Kraugerud also found that sheep foetuses that had been exposed to these PCB variants while in the womb had a diminished ability to produce the vital hormone cortisol.
>Through laboratory cell cultures, Kraugerud demonstrated that both PCB and PFC can directly affect the production of steroid hormones. Steroid hormones, including for example oestrogen, testosterone and cortisol, are necessary for maintaining the capacity to reproduce, normal development and normal bodily functions in humans and animals.

“English rivers so polluted with estrogen-like chemicals that male fish feminize and strongly reduze fertility”
>Feminization of the male roach, Rutilus rutilus, a freshwater, group-spawning fish, is widespread in English rivers; among the causative agents are natural and synthetic steroidal estrogens and chemicals that mimic estrogens. In feminized male roach, concentrations of the egg-yolk protein vitellogenin are elevated, sex steroid hormone dynamics are altered, and gonad development is disrupted (most notably, a female reproductive duct or developing eggs [oocytes] are present in the testis). In some English rivers containing high levels of estrogens, all male roach sampled have been feminized to varying degrees. In the more severely affected males, individuals produce low-quality sperm with a reduced capability for fertilization. Laboratory studies have shown that the environmental estrogens responsible for inducing gonadal feminization in roach can also alter reproductive behavior, disrupting normal breeding dynamics (parentage) in the zebrafish, another group-spawning fish. Together these findings indicate that feminization of wild roach may result in adverse population-level effects, but this hypothesis has yet to be fully addressed.

Increased serum-Test does not off-set the damage estrogen does to your testicles, it would still fuck up your reproductive health. Also the study only measured total serum-T which isn't an exact indicator for the effectiveness of the hormone, you can have high total serum-T levels without changing the effective free Testosterone in your body, just because the regulatory cycle of your body ups the T doesn't mean it offsets the effect of inhibition. Stop trying to make yourself look smart if you can't even differenciate basic terms.

But let's assume you are right. Those components are basically eternal and are widely distributed in the envoirement. Do you know what that means? >caring about the health of your people is being soulless
Aye, Moshe, I am sure you have other ways to subvert humanity outside of cooking in trashbags.

false equivalence doesn't make you smart. ranting about jews doesn't also instantly make your argument any less retarded.

You can call me all the names you like, Moshe, doesn't change the fact that you are ranting against people trying to share benefitial information to the wider public.
Why would you need to do that? I'm sure you're too stupid to have stocks with Dupon and co. Are you just part of the IFLS crowd which actually just loved to reshill stupid news of the week while kvetching about actually usefull data because you haven't been propgrammed to like them yet? Why would you feel the need to call a woman obviously caring for the wellbeing of her people a "soulless bitch" if not because you are invested in preventing those same people of being healthier and better informed?

once again a soulless dyke incapable of looking inwards, it's always enjoyable to see someone project. it's even better when they respond to your first post in the thread as if they're the ones they have been shrieking at for the past 12+ hours.

and to think we actually let you vote.

Oh well, I get it. You took offense in the poster being a woman. To think that I thought there might be actual reason for your fact denial.

No worries tho, it's not like voting actually changes anything, golem.

The fact that it’s ok to castrates pigs and cows with no pain meds is fucking disgustingly cruel. This is why I don’t eat meat and honestly the Jews the right that most people are goyim, you can talk shit, you can say something gay about enjoy your ( insult of choice ). I don’t care, you grew up on a farm and I didn’t, it doesn’t make your life any better or you more of a man. I understand that you can’t have the bulls getting in territorial disputes, but there’s no fucking reason not to use pain meds other then you being cheap as fuck... it should be illegal to do this.

It's not cruel, it's how the world run before modern medicine. It's all done within 2 seconds in rural areas. You not eating meat doesn't change this necessity in poor or older times. In the west the pigs usually get local anasthesia as it is forbidden. But guess what in the 90s UDssR people didn't even had anasthesia for a teeth removal on themselves. And yes, the life and suffering of those rural people make them better men. Men which can actually deal with reality instead of putting animals abive their own health.

You sound like a woman, this is not meant as a insult but as a factual statement on which you should ponder for a while.

You can just use a plastic bag and a regular cooler for no money; see Kenji Lopez-Alt's videos on this if interested. But personally I find that since you have to sear the steak anyway it's not really worth the extra effort.

This post is full of non-sequiturs. E.g., people in the past suffered pain, therefore it's okay to inflict suffering on animals.

The logical response is to acknowledge that factory farming is morally wrong but it's too inconvenient for you to change your habits.

I would say avoid the foodsaver vac. Its okay but sometimes it wont pull a vacuum on larger items. The weston pro seems like a better bet. Once my food saver croaks ill buy the weston pro.
