They're not peelable and servable when simply coddled. The whites are too soft. A cooked unpeeled egg will keep longer in the fridge, even days. So get the tradition of cooking them this way, esp since they can get so cold so fast when carried up from a service kitchen.

Also, they need the egg holder for the soldiers routine of dipping. They pretty much just leave the white in the shell.

I don't eat them this way, but I have been served them from time to time this way, and ehh, it's kind of enjoyable, slows you down, good for dieters with zero fat added, and social people have something to do at the table to play with their food.

Right... nobody here would have a specific pickle fork, or a set of espresso demitasses, or a butter dish (never mind a butter warmer), or a cake stand, or a soup tureen, or a whiskey nosing glass, or a gravy boat, or a sugar bowl.

Don't even get me started on salt shakers. They simply do not exist in this universe. Birds are not real.

You can also sit an egg on a shot glass, if you don't believe in nice things.

A butter dish is commonplace.
It allows the butter to remain soft at room temperature, and the lid keeps dust and hair out of it. Some designs also incorporate evaporative cooling, to slow onset of rancidity during warmer months.

Practical things can be aesthetically pleasing.
