Whats the point of flip cooking if you can't get half the ingredients? Kinilaw/siningang is amazing if you've got fresh corral fish and the dozens of exotic souring agents(fruits/leaves/vinegars/etc). You can't get fermented anchovies chosen by days of fermentation nor palm/pineapple/mango/etc vinegars, nor wild ginger/galangang/lemongrass... And if you ain't using these ingredients(like the vast majority of flips because of their shit food culture) then flip cuisine is mediocre.

Just fucking buy any grouper from literally anywhere and dunk it in vinegar. Other ingredients (even fully prepared/cook kinilaw/sinigang) can be had from specialty Filipino stores (Pacific Market/Seafood City) and they are justasgood. The only thing they won't sell (because they can't) are Baked Porky Popps, the most powerful snack on Earth.
