They're almost all way too complicated for someone who just wants a decent meal. Just focus on how to cook single things well (pan-fried meat, roasting veg, etc.) and basic techniques, then mix and match. When you get comfortable with dead-simple cooking like that, you can look at recipes just for new ideas.

Anyone who wants to use this please watch chinese cooking demystified’s stir fry videos for higher level knowledge.
Also don’t bother tenderizing your meat mechanically, just marinate it in a little soy sauce, shaoxing wine/sherry and baking soda for like 15 minutes, and then very quickly deep fry it before taking it out and finishing the cooking later with the rest of the stir fry. This is called velveting
Oh and just buy some shaoxing cooking wine and thank me later

I guarantee you that your grocery store carries lentils. Fennel may only be seasonally.
