Lamb is delicious. People don't like it for the same reason they don't like venison. "Its not meat/cow". Its like they have something in their brains that makes them expect all red meat to taste like cow.

I usually smoke a leg of lamb and make homemade gyro type pita wraps. Tziki sauce, red tomatoes, purple onion, pita bread and smoked lamb. It tastes delicious.

Costs a helluva lot more than beef/pork/chicken, and I ain't got all that money to spare. I'll treat myself to it occasionally with some lamb shoulder steaks which are cheaper than chops.
I did recently splurge on a big fat lamb leg that was on sale for $3/lb at my local market.
It's not a taste issue, it's a price issue.

Read above and if it's a roast like pork shoulder or a beef roast I can get 4-5 lbs of the stuff for like $10-$15. If converting that roasting cut into a stew then it gets even cheaper per serving since carrots and potatoes are negligible price.

Not sure about NZ and Austrailia, but in the US it's likely going to have more graising in its diet and thus gamier compared to all cornfed pork, chicken, and beef. More on the gameyness discussion. Gameyness general means a stronger, less neutral flavor. This comes from differences in fat characteristics, myoglobin concentration, and the development of the muscles.

Most of the meat we eat today comes from very young, inactive animals that eat high calorie diets of processed corn. This makes large, soft flabby muscles with lots of marbling but very little flavor.

Until recently most animals raised for meat production would be slaughtered at an older age and live much more active lifestyles, graising and foraging for most of their calories. They also go through more hormonal changes which influence fat distribution and muscle development.

You'll often hear that some cuts are working muscles and are tough but flavorful while other cuts are inactive, soft, and mild. The same can apply to an entire animal based on its lifestyle.

So I would say the reason lamb is not popular is because we do not raise lambs the way we raise other animals, and because of that their meat is very different.

Because it takes serious skill to cook properly. My friend had been inviting me over for dinners recently and would often grill lamb on a charcoal grill. The lambchops were heavily seasoned and they were delicious.

I tried to cook some at home and failed miserably. It tasted like absolute garbage. Intensely gamey, just did not taste good at all. I want to try making it again, but knowing how difficult it is to get right is a bit of an impediment. It's good, but it's not so good I want to work that hard to eat it.

Because people are far too used to eating bland and mass produced meats. The closest people will get to stronger flavors of wild meats is often lamb. But there is a difference from the flavor of wild meats and lamb. Most of the flavor people find off putting about lamb is the barn yard like flavors within the fat.
