Chili Dog Thread, there are many ways to make one and many local variations through out the US, but chili and hot dogs are a winning combination.
>Coney Island hot dog
>In southeastern Michigan, a Coney Island hot dog is a European-style Frankfurter Würstel (Vienna sausage) of German origin with a natural lamb or sheep casing, topped with a beef heart-based sauce, which was developed by Macedonian and Greek immigrants in the area. I got stoned once and wrapped a hotdog in bacon then started making a grilled cheese sandwich to go with it and decided part way through to leave the sandwich open faced and put the bacon wrapped hotdog on it. I called them fatty dogs. They are great but will make your heart hurt.

I concur. The Carolina slaw dog(commonly just called all the way) is life changing. My wife is from NC, i just moved here, and was hesitant at first. Makes me never want a "normal" chili dog instead.

My family got the fuck out of WVA, but one of the things they brought with them was a love for boiled hot dogs, steamed white bread buns, and this chili sauce (with sweet diced slaw, mustard, and onions)

>6 C water
>2 lbs. hamburger
>1 t. salt
>2 Tbsp. freshly ground pepper
>1 Tbsp. red pepper flakes (more or less to taste)
>1 29 oz. tomato puree
>1 Tbsp. paprika
>1/2 C. finely chopped onion
>Mix beef in water and bring to boil.
>Add all ingredients and simmer often until sauce is thickened.

The texture you're looking for is basically a fine grind, not paste. Also, the recipe above can be modified to your tastes, imo it could use a lot more paprika. The best hot dog sauces I've had usually had a little spice to them, and a good red color.
