If you had any idea you'd realize that, sure, polyunsaturated fatty acids are essential, but so is keeping an adequate ratio of them. You'd also know that omega-6 fatty acids are inflammatory, which is by itself useful as inflammation is the way the body fends of infections, but an excess of them ends up leading to chronic inflammation and desease. If you've ever seen the nutritional profile for vegetable oils you'd know the excessive amount of omega-6s they have. You could counter this by increasing omega-3 consumption, except that the vegetable products don't have omega-3, they have ALA, which is something our body can transform into omega-3s, at about a 5% rate. Compare the o3 to the o6 amounts in vegetables oils, nuts and seeds and you'll see why this is a problem.

Besides, anecdotically, we can see that in spite of shifting from lard/tallow to vegetables oil and reduced fat products, obesity, cancer and heart disease have not only not been reduced, but have been quickly increasing by the decades. Clearly using animals fats was not the issue. I'm not saying you should mainline a pound of lard, but understand that nutrition goes beyond "good" or "bad" foods, and the combination of frying in polyunsaturated fats with refined carbs (or flat out sugar) will absolutely give you a heart attack.

You don't have to buy them, just call and ask if they have leaf fat for making lard. They won't so they might offer to give you as much other fat as you want. Show up, tell them how big a crockpot you have and ask for that much fat. They'll bring out a big bag of trimmings that they make hamburger out of and give you how much ever you want since they probably throw out who knows how much each day. Sort through the trimmings, scavage as much meat as possible for stew meat, chop and toss in the crock pot. Maybe repeat again with a little water.

Rendering fat is easy, same for chicken, pork and beef.
Put the solid fat in water, simmer, stir it to make sure it doesn't burn. After the pieces start deep frying in their own fat. I only eat the pork cracklins, but they are extremely tasty.
Lard (pork fat) is by far my favourite. You can even use it instead of butter for baking pastries, makes everything extra flaky.
