You can leave butter out on the counter. I just put it in a small tupperware container. I always have a stick out and the butter is nice and spreadable. It won't ruin unless it's ridiculously hot in your place. It's good for a week or two depending on the temperature. I keep the rest of the box of butter in the freezer and wash the container and replace with another stick of butter as needed. It was such a wonderful thing to learn that you can leave butter out.

I've been keeping butter out for years and it's always spreadable during winter. Even with the latest cold snap where the temperature was around 0 at night for a week it didn't get too hard to spread. If you never use your heater throughout the winter it would probably get too hard then but otherwise it's fine.

I've stopped spreading butter on bread and instead brown it in a small frying pan then rub the bread in it. This works out very nicely if you're making eggs as well since you have to butter the pan anyways and can toast the butter soaked bread while the eggs cook.

The butter is much easier to spred if you dont cut off a thin slab from a side but scrape the butter off of the top. You get much thinner "shaving" that way, and the butter is already "broken up", so to speak.
