As a child I attended the cookout at the annual meeting of the Wild Hog BBQ club. I don't think it's delicious, even when it's cooked well, and in every recipe you think of enjoying. By all means, kill them for sport, but don't kid yourself it'd be yummy. It's not.

Boar is great, though I only ever eat ones under 40kg, I'm told by the seller that the larger ones are not worth eating.
I like it even with rather neutral flavors. For ribs I just do it slow and simply spiced with salt, black pepper, white pepper and juniper berries.
My favourite is stew though. Red wine, carrots, soy sauce, rutabaga, juniper berries, chanterelles, thyme and blue cheese.

Hunting boar is more pest control than sustenance. I had a friend go on a boar trip and they hired a helicopter pilot to fly them around and they shot from the sky. Of course they just left the dead to rot because theres no value in boar. You don't eat the rat after trapping it do you?

There's plenty of value in wild hogs. Toss one search into Google and you'll see they sell for upwards of $0.60/lb live when trapped.
They're put in feedlots then finished out like domestic pigs for slaughter.
Also any hog under 75lbs, or a sow at any weight tastes almost identical to Wilbur who you buy at the supermarket.

There's never not adrenaline when you shoot something, even with a perfect heart/lung shot they still usually jump at the shot and run for their lives. Even a CNS shot sends them to the ground flopping around and running in place. Environmental/dietary/hormonal factors and how you handle the meat afterword matter more than anything. A yearling doe shot in the gut and tracked for hours will almost always taste better than a 5 year old rutting buck that drops where it stands. 80% of the deer killed in my area are shot while being chased by dogs and they're all still edible.
