Well, Saint Paul goes on and on about it in all the books he wrote, but in essence the point is that with Christ's sacrifice, all the Law was fulfilled, so there was no longer any need to abstain from certain foods, because no food was impure any longer, nor should we cut our bodies as sign of our covenant with the Lord.

I think a lot of it had to do with hypocrisy, and how the Israelites would outwardly profess the belief in God by following their rites and so on, but in the secret of their own homes they would do the opposite. Jesus constantly talks about this as well.
