There's culinary category "white fish" for a reason. All those fish really are quite similar. Get outside of that category, though, there's lots more variation in flavor. I really love mackerel, for example. Flesh is medium-brown, strong flavor but not pungent if you know the basics about of cooking fish (acidic pH, don't overcook).

It's you. I can tell the difference between tuna and salmon fairly easily and without vision, especially raw. Tilapia tastes different from marlin, etc. Lots of whitefish tend to get buried under mounds of oil and breading, so I can see why you'd be blind if that's all you eat.
