Few chefs I worked with along the years went to cooking schools and desu they re not the worsts,not the best either.
The best I worked with usually did an apprenticeship and started at 16 getting paid fuck all and being exploited,they re the one with real passion and hunger.

Chefs from schools are full of theory but no practice,it s always been fun to watch them running like headless chicken.
And since we like to have fun on the floor it s even funnier when you tell the staff to hold orders and then send them all in same time kek
