Yeah, it's always a little spooky even though it's nice to have a slot for a spoon.

Somehow it hasn't been an issue after a few years of having the bowl. Probably because I'm always nervous of spilling out of it lol.

it's sous vide so that's why it looks a bit undercooked but isn't. I've tried a few temperatures for pork loin and that one is just right I think. This one is a bit low (but still fine) for comparison

It's then seared, brushed with mustard and then rolled in toasted crushed mustard seeds, so not sure that counts as a crust

Just curious, how’d you make your hollandaise? It looks very light, my hollandaise is yellow from the egg yolks. Also typically you add cayenne not paprika if you want to give that a shot next time.

I’m sure it tasted good, looks well cooked.

Normandy Casserole, which is basically chicken thigh meat, apples, and onion in a wholegrain mustard cream sauce. Very easy. Yes, got really lazy with chopping the chives because I almost forgot them. Sides are green beans and salted fresh tomatoes. Very nice.
