I have experience with ALDI, which competes directly with LIDL in places where both exist, and they do this by cutting operating/purchasing costs, like:

I'd say Costco in particular has a special status to it, since it is the store of place for the up-and-coming middle class and lower upper class, who particularly have homes and means to buy in mass bulk. The thing with LIDL is that they have easily the least diversity of products compared to other supermarket chains. Want to buy asian ingredients ? Can't. Mexican ? Can't. Your favorite frozen pizza brand ? They don't have it either.
I think that's the main reason why there products are so cheap. Also a lots of things are thought out to reduce cost as much as possible, like putting huge barcodes on products so that cashiers can scan them more efficiently. Finally, the average quality of the products is usually pretty bad, not unhealthy, but bland.
So in any case I'd say it's a better value than more quality focused stores, especially on organic products, but you still get slightly more than what you pay for, so not much.
