i think the issue with kenji and serious eats generally is they try to get the best possible recipe. kenji's better about it with the videos where he cuts some stuff out, but a lot of times their specialty ingredients/techniques aren't wroth the effort. they're a good starting point though, they do a good job explaining why they're doing what they're doing. i basically learned how to cook from SE/kenji and america's test kitchen.

I learned cooking from reading Serious Eats and it's still the best place to check for a recipe first. His videos are very informative. The Food Lab is one of the best cooking books every written because it combines actually teaching you how to cook in general and in detail with great recipes.

Everyone who focuses on his twitter or polticial views is just a (far)-right and reactionary asshole. If you don't like his views, stop following him and stick to reading bis recipes. It worked for me too, it's really not hard to not waste your time being hateful.

Recommend the 3 ingredient mac & cheese and french bread pizza methods. To save you looking them up:
For mac & cheese get equal parts by weight dry noodles, cheese and evaporated milk. In a pan start cooking the noodles in just enough water to cover them, then once they've absorbed much of it add the milk. Once most of that is absorbed add the cheese plus any extra flavorings, I recommend mustard powder, hot sauce and pepper as a baseline.
For the french bread pizza just smash the bread between a couple sheet pans first, brush the tops with garlic butter and melt on a layer of cheese before adding sauce/more cheese/toppings. This insulates the bread from the sauce and keeps it crunchy instead of just absorbing it.

I enjoy watching Kenji, he taught me a lot of stuff that I would consider cooking "hacks" just the little things you don't really learn until someone tells you. For some reason theres a lot of little tidbits about cooking that no one really talks about and just takes for granted.
Like Claire Saffitz did a recent video for a cake and casually explained why you shouldn't use a glass dish vs a metal dish. The glass dish heats up slower and holds its temp longer which results in a overdone outside with a raw inside. Metal heats up quicker, distributes the heat better and dissipates quicker.
