Most Jews nowadays don't follow Jewish dietary law or purposefully subvert it for a sense of "rebellion". They're constantly finding ways to avoid their religious restrictions to the point where there's entire groups of Jewish scholars dedicated to interpreting and stretching the meaning of their scriptures to make life more comfortable.
