>never made tenderloin before, but made loin plenty of times
>check like 15 recipes for method
>marinated for 4 days
>recipes all swear up and down it takes at most 25 minutes - 140F-145F
>at 25 minutes it is reading 80F
>finally say fuck it take it out at around 45 minutes
>thermometer still never reached 140F
>tasteless, but, amazingly, not overdone

Pork tenderloin is great and it doesn't need a recipe if you keep it simple, which you should because a good cut of meat speaks for itself. Just fry it in butter on a medium flame for 12 - 18 min depending on the size. Season with salt, pepper and a bit of rosemary. If you manage to fuck that up, leave this board forever.

did you pull it out straight from the freezer or something? if i make pork loins i pan sear them and put them in the oven for 12-15 minutes and it's perfect. No need for brining or marinating it for 4 fucking days either

Brine it for an hour. Doesnt have to be fancy, just a sugar-salt brine will do wonders flavor and jooce-wise. i do a quick sear to try to get some browning and then into the oven it goes at 420f (lol). I bring mine up to 145f using a leave in probe.
