What a joke. Italian cuisine is literally supposed to be "peasant food", i.e., do what you can with whatever little you have. The whole point is the delicious things you create while having very little to work with. The other aspect is how everyone's "mamma" makes the recipes different so no two bolognese, no two lasagne (etc) are the same.
So when an Italian chef acts snooty and claims "that's not the proper way to make X!!!" you just know he's a hack trying to emulate French chefs. French cuisine can act elitist because it's aristocratic in its roots and based on a ton of arbitrary rules (etiquette). Italian cuisine cannot do this because it's meant to be the most basic and accessible type of cooking.

italy has the most accessible food "culture", in that it's quintessential poverty food with only cheap ingredients that are barely touched upon, so that even the most retarded inbred italian farmer can master it (and take pride in it as if cooking pasta is some impressive skill lmao!). cheap ingredients, for cheap people (italians are notoriously stingy). As such, and because italians fled their failed country en masse, it is indeed correct to say that italian cuisine transcends all geographical and cultural barriers, just like poverty and aids, two other things italy is known for.
French Haute Cuisine, on the other hand, is exclusive: it asks for the best ingredients, the best cooks, the best savoir-faire. Not everyone can prepare a satisfactory french dish, and fewer still can do it right. Those that can spent years honing their skills under ruthless masters, because such is the price of perfection. It is a sophisticated food, for sophisticated people. It requires a delicate palate to properly experience it's subtilities and charm, to appreciate it's genius and elegance. Peasants can't begin to imgagine such things, and that's perfectly fine: it is not meant for them.

No. Some of the core ingredients are expensive for various reasons aside from DOP
> olive oil
> truffles
> saffron
> pesto
> bottarga
> colatura di alici
Those are core of italian cuisine and pretty expensive for food. Other countries cuisine are equally expensive

fair enough

how is olive oil expensive? Unless we're talking Brisighella oil..

Bottarga and colatura are absolutely not "core ingredients", i cant really argue on the price since i never bought those.

Pesto can be relatively cheap and even home made if you have a mortar

>> No.16206882

> how is olive oil expensive?
It's expensive as a fat, way more than for example butter, which is (was) the fat of choice in other coutries

By expensive, you have to think in terms of food consumed nationally

> Bottarga and colatura are absolutely not "core ingredients"
They are in some part of italy.

> Pesto can be relatively cheap and even home made if you have a mortar
Pesto is really expensive as a sauce. You need a lot of basils per person, which is not a very cheap plant per se, pine nuts, parmigiano, and olive oil. It doesn't matter if you do by yourself, the ingredients are pretty expensive, the only cheap ingredient in pesto is garlic and salt.

I'll allow it. Tho I never ever heard about colatura.

> Olive oil is expensive compared to butter or other fats
True, still you cant really use butter on salads and although oil and butter can be sobstitutes for certain uses you cant really draw a 1:1 comparison. It is more expensive but comes with its own set of different uses. Also I might be biased since i live in Italy.

>Pesto is really expensive as a sauce
Meh. Its mid tier, still cheaper than saffron, truffle/mushroom sauce and boar or deer ragu. Basil is expensive if you buy it as ingredient, consider purchasing a small plant. I have my own rosemary, sage and basil sitting by the window.

Yes, but every country has a "national" fat be it some kind of vegetable oil of animal fat.
Lard, butter and cream are cheaper than evoo, which is nowaday the national fat even in the south

> Meh. Its mid tier, still cheaper than saffron
It's not mid tier. While it's not expensive in absuolute terms, it's orders of magnitute more expensive respect to onion or tomato based sauce.
And it's more expensive than the average sauce of any country.
Saffron is more expensive, but that doesn't make pesto cheap

At this point none of us is either right or wrong, we just draw the line at different prices. Tomato base sauce is not only cheapER than pesto, it's just cheap. The only thing less expensive than tomato sauce to put on pasta is (quite ironically) olive oil.

Lard is absolutely the national fat in Italy, from north's piadina to south's 'nduja. Still I guess to me olive oil is an "essential" ingredient that i use in many ways almost on a daily basis, so i dont really mind the price too much because i would buy it anyway.

Also to me evo is cheap because rather than comparing it to other fats like lard i compare it to.. well different versions of itself. Olive oil being an essential good to me stands in its own category.
Example:
Regular evo = 5-7€ /lt
Brisighella oil = 30€ /lt

You have to compare to other fats because it's what it is.
fat is a core component of any cuisine, any country have/had a fat (or more) on which their cuisine is built upon

Some African country has palm oil, northen eastern europe have lard and butter and western europe tends to be more oil based

So more seriously, it would be like if someone served you a pork patty on a croissant and called it a hamburger. It's just literally not the thing you're calling it, even if it has a lot in common. >If if were accessible, they wouldn't care how you make it.
They don't. Only fags on youtube pretending Italian cuisine is like French cuisine do. That's the whole point.

>French "cuisine" was built around hiding shitty ingredients with rich sauces and complicated preparations. Now that they have access to good ingredients, they pretend like it's what they were doing all along
>b-but French cuisine wasn't g-good in medieval times!!!
HOLY MOTHER OF COPE! Giuseppe right here in fetal position, seething about the fact French cuisine is literally older than his "country"!!!! absolutely shameful display of impotency ngl

Well for starters, the french cuisine culture was introduced by Catherine de Medici. Pâte feuilletée and béchamel evolved from Florentine prototypes, whereas cassoulet is probably based on the spanish fabada asturiana. It was also Catherine de Medici who introduced the fashion and toiletry culture that came to define france. Second, the 'haute cuisine' status exists only in english-speaking countries, initiated by the british and propelled by the americans. Even neighbours like the Netherlands, Denmark and eastern Europe associate france with perfume and dresses, not with food. That is not to say there are no french restaurants in those countries, because there assuredly is; rather, it is a type of ethnic food, no higher (or lower) in status than food of any other foreign culture.
