Fuck bros, I've been eating Lao Gan Ma for years and I never refrigerated it but apparently I've risked botulism for years now
Anyone else do this?
Was going to eat some just then from a month old bottle and read the label and it said to refrigerate it and after searching it up online threw it away

>> No.16297302

>>16296897
I would have eaten it.
But I'm the kind of person that eats raw eggs, rare beef and pink pork. The average american would tell you to burn down your kitchen, just to be safe.

Botulism doesn't exist. Look up the stats of how many people contract it every year. And now consider that there are people out there who literally don't own fridges and have no idea about food safety. Botulism is nothing to be scared of.

>> No.16297342

>An average of 110 cases of botulism is reported annually in the US. About twenty-five percent of these cases are foodborne botulism.
So that means there are roughly 30 cases of foodborn botulism in a nation of 300 million people.

Oil goes rancid between half a year to a full year

One month is fine

some oils and oil-based foodstuffs will go akimbo in 3 months anon. but even without going rancid, anything will remain fresher in the fridge

What I remember as chinese food growing up as a young kid in Hong Kong

>turtle/shark fin soup
>fried chicken feet
>pig uterus noodles
>fried rice with pork knuckle gristle
>unidentifed fish balls on a stick
>boiled dog meat
>one time, monkey brains

Americans have no idea how bad it really is. No one in china knows what the fuck beef and broccoli is or sweet and sour pork. Chinese food is disgusting. Literally the worst parts to eat of any animal. Makes sense because chinks are the race of humans closest to animals. They make disgusting noises when they eat, slurp everything, men in the streets lift their fucking wife beaters over their sweaty stomachs while laughing and chewing with their mouths full of food. Like what kind of idiot decided 2 sticks is the most practical way to eat grains of fucking rice. Starving Nigerians who eat grass have a better diet than the average chinese.

280mg of sodium per 30g. If all the sodium was from salt, that would make it about 3% salinity. But a good chunk of the sodium comes from the MSG I think.

>> No.16297474

i guess it is another pepper oily paste which is composed 50% of salt. well refrigerate it. Oil can go sour. i once tried fresh chilly in oil and bubbles appeared after few days

wait does MSG ackchually contain salt though?

also I buy the Lee Kum Kee chili oil and it has zero salt or MSG. it's bland as fuck but I wonder if that brand is better to buy and then just season as needed

>> No.16297490

>>16297475
MSG is chemically a sodium salt, but it's not sodium chloride, which is what people usually mean when they say "salt". Cocaine and amphetamines are also salts, but you wouldn't try to preserve food with them.

sodium IS the salt lol
sodium chloride dissolves into ions in solution and salinity is based on concentration of sodium ions

salt doesn't need chloride to be a drying agent
you'd be able to preserve food with potassium salt and magnesium salt too

Spoonful: Completely Normal
Pickle: Doesn't jive well, wouldn't do again.
Strawberry: Surprisingly complementary. I expected it to be much worse than the pickle.

So yeah, time to wait and see what happens.
