Just found out I have Crons and can no longer eat gluten but I still love spaghetti. Has anyone tried any gluten free spaghetti, and how did it taste? I've heard that homemade gluten free pasta is the best but I don't know.

I've had rice pasta and it was pretty ok. Bland in comparison to the real thing but I love Asian rice noodles so it was acceptable

Gluten free noodles have some caveats
1. They kind of stick together, so you should actually use a bit of oil to help separate them
2. They are NOT good the next day. Do not expect leftovers.
3, Other than that, they're perfectly fine, eat to your heart's content.

Tinkinyada noodles are the best imo. Get some king Arthur gluten free flour for roux and stuff. You'll make it, it's just a learning process. You will be forced to eat much healthier. I will warn you now that resteraunts are going to become impossible to eat at unless they are dedicated gluten free. Your body is very damaged right now, so you might not notice cross contamination. As your small heals, you will become much more sensitive to cross contamination. Sorry bro.

I have also heard of this. A coworker used to eat gluten and just deal with the problems until he stopped for months and then the consequences became MUCH more severe when he tried to eat it again. I think what I’ll try to do is have a gluten product like a burger or something every week or two weeks just to keep my body somewhat familiar with it.

Seconding Tinkinyada, they're easily the best I've found. They definitely stick quite a bit though, so toss 'em with a bit of olive oil if you're planning to make more than you'll eat right away.

I have ulcerative colitis, it's true docs sometimes can't say if it's UC or crohn's, especially at the beginning stages because I guess the symptoms overlap and histologically there doesn't seem to be a difference (my report just said "moderate signs of chronic inflammation present"). Nah these days it's just slightly off but if you put a sauce on it you'll hardly notice. Also never put straight MSG on pasta, you want fucking Dorito noodles? Use parmesan and make pic related, I guarantee you won't care whether the noodles taste a little different

Coeliac here too, GF pasta is easy to get used to but I'd advise a bigger pot to cook it in wiith as much water as you can fit. Also don't stir too much, it has a tendancy to fall apart easily.
It's hard at first but once you get used to reading labels and what to avoid it gets easier.
