Start by not drinking Mondavi Pinot Grigio ffs. With regards to beer vs wine, bottom shelf beer is often bland but drinkable, whereas bottom shelf wine is often shite.

Pinot Grigio is pretty much the most inoffensive wine out there, but if you must, buy one that's from Italy. It will be bland but likely more technically correct.

Also, if you want something with low bitterness, try Riesling.

Get decent wine to start. Avoid anything from California or South America. Look to spend anywhere from $20-70. Keep in mind you may not like certain varietals. I mostly drink reds so I’d recommend a Tempranillo gran reserva as something approachable on the red side. Try a crisp, white wine such as Pinot Grigio or Sauvignon Blanc paired with Greek: Hummus with pita & veggies, Calamari, Spanikopita.
Another good one is an Italian white with a Pasta fra Diablo w/ chicken or shrimp. If you can find an It. restaurant that sells Pasta Diablo, they'll likely have a selection of Italian whites; pick one off the list; it really won't matter which.
Or pair a milder red wine, Pinot Noir or Beaujolais with a red meat, like a hamburger (nice restaurant; not fast food ofc).
Notice I'm pairing them with slightly less than gourmet meals (steak, etc.), but if you prefer those dishes, go for it.
Once you get used to it, you can move up to bolder wines: Chardonnay for white, Cabernet Sauvignon for reds, ofc you can also stick with what you like.

At the end of the day no matter what some overcompensating fags on here might say the human body does not naturally like the taste of alcohol, coffee e.t.c.. To fully enjoy wine try to have it with good food and smaller glasses. If you have a way smaller glass you’ll feel way less forced to drink it all and it won’t feel like a chore. It should be something you enjoy not just something you drink because “you’re supposed to”. This goes for whiskey and other spirits too. And before you call me a queer for not having enjoyed alcohol for the first few times when I were 17 or 18 try giving a younger cousin or family black coffee, they will not like it and neither did you the first time.

This wasn’t really the point of my post. My point wasn’t that we were to fool ourselves but that someone really can enjoy the taste of alcoholic beverages if they just learn to look past the bitterness of the alcohol. Wine can be good and enjoyable which is why a lot of non alcoholics really enjoy it, me included. This is true for coffee too, and while yes it’s a “drug” the reason people drink it is because they’ve learned to like it and it’s more “natural” (they feel) than snorting a lime of white powdered caffeine.

Barefoot Pinto Grigio is a great introductory white wine - very smooth, minimal aftertaste.

As others have said, maybe just enjoy a small glass with a meal to begin with.

I'm in the same boat as OP. I can't stand the stuff. I want to cook with wine as I feel I'm missing out on simple dishes that showcase the flavor of the main ingredient rather than overwrite it (such as a curry), but every cookbook I've found recommends to use "only a wine I would drink". What do you fellas recommend for cooking? Hopefully something <$20usd.

Also, how long does an opened bottle of wine keep? Do you store it at room temp, or does it get nasty?

Trying wine is crazy hard.
The bottles are 4 times as much as a drink, but it dies after a day so you actually have to drink it all. You can't go to a tasting bar because having a large selection means bottles will have been opened for a long time. And there is so much on the market with so much more coming out that you'd have to drink an insane amount just to keep up. If you become an alcoholic or join a dedicated drinking group and do manage to keep up, even non-vintage wine changes year to year so your experience straight up expires.

It took me no time to get through every brand of beer available in store. It took a couple years to get through all of the entry level whisky bottlings for each distillery available in store.
But wine is a lost cause. I went to a 100 shiraz tasting once, I'd probably need to do one of those for each varietal a year, plus partake in a second wine only drinking group every week.

tl;dr guess and get lucky, it's the only way.

Children will happily drink alcopops and probably even cider.
And your sense of taste literally changes as you age and you legitimately gain an appreciation for bitter things. At which point someone will enjoy their first sip of beer.
Besides there's plenty of acquired tastes that even children partake in. Chocolate. Any number of foreign foods. Even the local cuisine that foreigners shit on (like 3 year old's eating vegemite sandwiches every day).

They do. They pretend to hate things, and refuse to try things. You can trick them into eating things they claim to hate, and they'll frequently end up enjoying what you've given them. Or you can force them, and they'll frequently end up enjoying that kind of food in the distant future.

That's not particularly fair without tasting it blind. I've tried a fair amount of alcohol free beers / wines / whisky and they have all been absolutely trash. Everybody expects the next one to be trash too.
Decaf coffee is a much fairer example. As far as I am aware it's not noticeably different, and there are absolutely times where I'd enjoy a coffee and not want the caffeine.
