I didn't have any bonito flakes or pre-made dashi on hand so I just made kelp stock and added oyster sauce to it. I know that sounds disgusting, but it actually turned out okay.

All the best Japanese food is yoshoku. Their traditional foods are decent to meh at best. None of it's groundbreaking. Not in a way that beats out another culture's take on it.

Traditional Japanese food tends to be prettier than it is flavorful, so they play up the mystique by trying to make it as premium and exclusive as possible. Highly prepared foods you can only get in one city in a tiny province. Regional treats that are 99% marketing and 1% taste. Just like how Japanese people are more materialistic to compensate for the lack of a big homes to show off, they turn it into couture to feel superior over. Like the French. Only in France the food at least has substance in their culinary autism.

In every other East Asia country you can go to 1000 different places for amazing-quality [insert dish here], but in Japan the 'best of the best' is only cooked 3 times a week by some powdery geezer that's forsaken the pleasures of the earth in order to learn how to select the perfect seasonal roots to dunk inside of some bland soup. Then the shit dies with him because he's a perfectionist and resents his apprentices too much to pass on his autism.
