Spam, diced and fried. It's a bit salty but great drunk food. Bacon and ham also work of course.
Blue cheese
Sliced jalapenos
Whole pitted black olives
Chili con carne (just a hint of it - I find the best way is to just cook the macaroni and cheese in an unwashed saucepan that you very recently cooked the chili in)
A plate of cream crackers - Spooning the Mac & cheese onto them as a topping

And I've never tried it with tuna but my Mum used to make a great tuna cheese pasta dish she called "Tuna Bake" so maybe it could work. That was with fusilli pasta, tomato, sweetcorn, so more of a casserole I think. It was finished in the oven for a crispy cheese topping.

Just like hamburger helper, a lb of well-browned ground sirloin crumbles, can be folded into a prepared box of mac n cheese at the end. Brown some onion with the hamburger, or a sprinkle of green onion at the end. To add crunch to the top, much as you'd get with a casserole of mac, in a small nonstick, you can melt some butter, and toast some fresh breadcrumbs, parm or other shredded cheese, and herbs of your choice. I might add some Tony Cachere's seasoning into this mix. You could run it under the broiler if you don't want to toast on the stove top.

Brown some bacon, crumble on top.
Brown some leftover ham steak or roast ham, serve on top or stir in.

Sautée garlic, broccoli, mushrooms, maybe some peas and diced bell pepper. Add some garlic and onion powder, dash of black pepper and maybe a pinch of cayenne.

Add mac, some diced chicken breast (typically roasted, prepped in advance), and stir until thoroughly warmed through. Might add a little chicken broth so the cheese doesn't burn, although typically not an issue if the burner is med-low. Cover with lid for added moisture.

I like Annie's white/Alfredo cup, so sometimes I add a dusting of parmesan or save a 1/4tsp of the seasoning packet to top my entire dish once plated.

a spoonful of cream cheese when the powder, milk and noodles are combined add a little extra bite & creamy consistency to the boxed stuff.
I like a little extra pepper from the grinder, my grandpa ate his with a shitload of ketchup, half the plate was MnC the other half was a lake of ketchup.
And yes, grandma was a horrible cook.
