Traditional french cuisine is pretty much the same as any continental countryside cuisine. Vegetables and an ungodly amount of cheese. Naturally it's quite good but nothing special.
Then in the capital we have autistic chefs perpetuating the legacy of royal chefs making needlessly complicated food. But we also have excellent culinary schools and people who come from all over the world to attend. This results in Paris being a hub of good eats
All in all I would say french cuisine is good but certain dishes are overrated when better ones are completely unknown
Oh and I haven't had better pastries anywhere else

Escoffier using his military experience to organize the kitchen into an actual workflow with clear respnsibilities, instead of the previous practice of a bunch of people running around doring random shit, was a stroke of genius.
(I knew about his brigade de cuisine way before Max Miller's episode.)

Recipe-wise, I like the more rustic fare over the hoity-toity stuff peddled in "haute cuisine" places.

The various pastries, French Onion Soup, and Croque Monsieurs are the only good thing to come out of French cuisine. If you alter even the slightest thing when cooking their dishes they condemn you to hell, even if it makes it easier or even taste better.
