I've seen recipes online simulating the experience but I don't like the idea of having to use cheese like a Japanese pop-up restaurant did or shit like that. it's bone in beef/veal shank, with a bit of trimming/frenching done at the joint/bone ends before cooking. It tends to be somewhat fatty, but when flame/charcoal roasted just til rare at the bone, it's amazing as is with a bit of salt.

It would be fat on the outside. There's a good layer of fat on the thighs of domestic cattle - but it's still a tough cut that needs some low-and slow heat - great for smoking, braising, or slow roasting... hard to find around here because it's usually turned into stewing beef.

ham hock (or pork knuckle, same thing, I believe) is a cut look reasonably close to it, while being small enough to be eaten by 1 very hungry person in a single sitting.
I know of two german ways to prepare it, which are schweinshaxe, and eisbein. Though there are probably good recipes anywhere where pork is part of the cuisine.

A slow roasted, or roasted-then-braised shank done over fire will have a reddish tint (smoke ring) for the first mm or two, and if there's a nice thick layer of fat in there, it will absolutely peel back and tear after a few hours of slow rendering - not quite like the half-cooked anime mozzarella in the OP, but definitely like the first dig into a smoked pork butt when making pulled pork.
