So let's say some sort of apocalyptic scenario happens, but you are lucky enough to be near a fully stocked supermarket that is intact. Also everyone else around you died and you're the only one there. Maybe you have a couple family members with you. Electricity is out and obviously refridigation is as well.

What can be preserved out of perishables that will spoil quickly? How would you go about preserving all that can be preserved before it all spoils? Also what would be the most important to preserve? In terms of both what will spoil the fastest and what has the most nutrients that you'll need.
Also consider composting stuff if it can't be saved or isn't worth your time.

Ah yeah, time of year is important for this question too I guess. Hmm, let's say it's a couple weeks after the start of winter, and it's snowing right now. So it's not like everything starts cooking in a mere couple hours.

I'd grab all the canning supplies, sugar, salt, and vinegar. I'd setup camp in the store and begin by preserving any meats that might still be frozen. Since you said it's winter the meat could be kept good for a few months while you can some of it.

canned, jarred, and freeze dried foods will last for years. with freeze dried foods lasting more than 30.

you'd have to eat what produce there was before it goes bad, you will have about 3 days to do that. but in al reality a typical grocery store could keep 5 people fed for several years.

eat the freshest food first. compost the stuff that goes bad.

preserve what you can and eat that first before eating the canned foods.
dried foods can be used as needed and don't go bad as long as they stay dry and free of bugs.

flour will start to get buggy in a few month even if put in sealed containers (it already has eggs in it when packaged). I keep mine in the deep freeze. If flour is kept in too humid an environment it can grow very dangerous forms of mildew and mold (ergot is rather unpleasant).

in all reality I would locate hunting, and farming equipment. To get a head start on for the coming spring. oh and you will have only about 5ish years before all the gasoline starts going bad. though bad gas can still be run in farm equipment for several years after it smells bad. All batteries that have acid in them will go bad in about a year without charging (10 years with good upkeep), better get some solar panels but remember they are only good for about 15 years before they start to lose their effectiveness.

basically if you can't find enough people to get society back up and running in 10 years it will take a couple hundred to do it, if you can get people to not be superstitious.

Really dumb idea to set up in the store. Everyone around you is dead, but you'll inevitably get survivors passing through and a grocery store is gonna be one of the first places they scavenge through.

All the meat could be salted and dried in a smoker to preserve it for a year or two under ideal storage conditions. Cured meats can be kept, also. Cheese will last a while if it's kept intact and stored correctly.

Everything else can be composted.

You would probably want to start removing perishable things from the store right away. You don't want a lot of things rotting in there. Eat what you can and toss the rest. The jarred and canned stuff should last you awhile.
