Cheap way to easily enhance certain flavors in a way that plenty of people enjoy. Can get similar results without concentrated MSG, but usually involves more complex preparation and alters dish flavor in more ways than just adding MSG.

Something that it does replace would be fish oil or soy sauce, for example. But again, you lose the extra flavors if you remove those entirely.

Should use both salt and MSG. Some people find that MSG reduces the amount of salt needed to get a fulfilling flavor, but personally I've never found it to be that way.
For a lot of soups, I find a bit of fish oil goes a long way.

In high school 5 years ago I did a presentation for a public speaking class explaining how MSG being bad for you was a myth, and many people in the audience became noticeably confrontational and mad at me over it despite all the evidence I had presented. MSG BAD is something deeply ingrained in people, even today.
Videos like the OP's are probably keying into that same reaction, along with allowing people to feel smart for not giving into their 'programming' to hate it.
That said MSG is pretty based, though it isn't a replacement for salt at all. Personally, I use 9 parts salt 1 part MSG as a general seasoning for most things, and that seems to be the right amount.

What I remember about Chinese food as a young kid growing up in Hong Kong was not really that it was “bad” (which it often was, of course) but that the stuff my parents ordered for us was almost all frozen, and that I would generally throw out whatever that they brought home.
