Peppercorns Kitchen in Evanston, Illinois has this very spicy fish soup that is their signature dish. The place is complete with a picture of Anthony Bourdain shaking hands with the chef hanging on the wall. As a white person, I highly recommend it.

SEA cuisine generally uses a lot of contrasting flavors (sweet, spicy, sour, etc.), while Western cuisine tends to be simpler and focus on salty/savory flavors.

With some exception, Spanish/Portuguese cuisine uses spicy flavors occasionally, American barbeque uses sweet/spicy flavors.

I prefer meats prepared in the Western tradition, it's close with seafood.

Biggest difference is that western cuisine uses braising heavily while many eastern cuisines cook most dishes in like 5 minutes.

I think this sums it up really nicely.

Western cuisine is largely driven by the french approach to cooking, which is largely about deepening and enhancing existing flavors. Braises, stews, pan sauces built around fonds developed from searing are all examples of this and fundamental techniques of western cooking. Seasoning is relatively minimal, and again designed to mostly enhance existing flavors in the ingredients.

Asian food instead is heavily influenced by Chinese cooking which attempts to layer and balance flavor in many different forms: sweet, salty, spicy, sour, all coexisting in one dish. Asian cooking rarely attempts to deepen flavor, and instead the emphasis is on adding and balancing a multitude of flavors. Strong flavored seasoning is often complex and just as important as the 'main' ingredients of the meal.

Of course, there are always exceptions but this is generally how I see it.
