Traditional red velvet cake is made with unprocessed cocoa powder containing anthocyanins that would react with the buttermilk and vinegar in the batter to produce a red color. Most cocoa powder now is processed with alkalizing agents to make a more consistent product that won't change color. You can still buy unprocessed cocoa to make a traditional red velvet cake. The food coloring will not come from food dyes and it has an effect on taste. Currently the most popular frosting is cream cheese frosting but it used to be boiled icing. For many people the different icing is part of the experience.

I've also seen old recipes that tried to boost the color and flavor with cherry juice and beet juice. Most modern red velvets are just chocolate cakes with food color.
