Basically it interferes with the ox bile I take which helps breakdown the bioflavonoids that cause the immune response that caused psoriatic arthritis. If I don’t stay on it, my arthritis doesn’t go away and I rack up permanent damage to my already soft joints (I’ve also got another joint disorder Ehlers-Danlos, that also makes me extremely flexible pic rel ) so they’re already weak.

A supermarket deli near me sometimes has what are labeled as "eclair pies." They are custard pies with a top crust, and just a squiggle of decorative chocolate icing on top. I decided to try to make one at home.

I used my usual pie crust recipe. For the filling I "used the Force" rather than a recipe and improvised:

two 12oz cans condensed milk
four large eggs
three tablespoons cornstarch (I may reduce this in the future)
one cup sugar substitute
one tablespoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon cloves
1/4 teaspoon allspice

I mixed all the ingredients uniformly, first with a blender and then with a hand whisk, and tried not to beat too much air into it.

When it came out of the oven, I put half a cup of dark chocolate chips on top immediately, hoping they'd melt. They mostly did not melt, though some slumped, and they did stick in place as it cooled. Next time I think I'll melt them in a double boiler and pour them over the top.

The filling set up firm and holds together in the slice without being too stiff or chewy, though the texture feels to me a bit uneven and a little bit scrambled-eggy, despite the fact that I whipped the egg and milk mixture pretty thoroughly. It also tastes less sweet than I anticipated, though the cloves and allspice did give it a nice hint of eggnog aroma and flavor. ("Festive for the holidays!")

Maybe it's just my palate. Sugar substitutes ("suitable for baking!") do not generally taste very sweet to me, and certainly not measure-for-measure equivalent to sugar, but I keep on trying for health reasons. If I were making this for guests, or to bring to a party, I would have made it with a cup of pure cane sugar instead.

Anyway. I think it isn't bad for the first iteration of the idea. See image.

I didn't make it today but recently I made a mock Beef Wellington with ground beef instead of a steak in the middle.

85% lean ground beef, a duxelles filling of minced white button mushrooms, green onions, and garlic, with thin sliced ham from the supermarket deli toothpicked in place all around, wrapped in butter pastry crust and baked golden brown.

I ate it with store brand yellow mustard because I am an uncouth barbarian.

Self rising flour? The leavening in it is likely to make the crepes poof up and thicken as you cook them and turn into thin pancakes. I mean, that's not the end of the world, and you will still be able to eat them, but my prediction is that the texture will be different.

I think I nailed it this time. I took some advice from the Chinese Cooking Demystified youtube channel as someone suggested and they did turn out much crispier. I didn't follow it to the letter but made adjustments based on how I thought I would like it. The major changes being adding a cornstarch slurry to the honey sriracha sauce, and adding a batter of 2 eggs and 6 Tblsp of cornstarch. So this is twice fried, cornstarch battered, and tossed in a thicker sauce compared to my last attempt. I think this is the way to do it for me from now on.
