Bag turkey is really moist though you sacrifice crispy skin and fond. You could brine the turkey beforehand and not cook it in a bag and have the best of both worlds but people don't want to do that for whatever reason where I live

Man I really liked 3-hour 145 sous vide turkey breast at thanksgiving.
I was thinking I could remove the skin from most of the turkey breast and sides/back, make a 2-breast roulade and sous vide it, then drape the skin cape back over the outside of the roulade and pan sear it.
