Food safety rules in the US have simply been formed with a lot of jewish input and make producing blood products very expensive (no transport of pig blood for a long time, defribilation requirement for animal blood etc).

Kinda sorta maybe. There's different types that differ a lot in how they hold together when heated. So be careful heating it so it doesn't disintegrate into a bloody mess. Maybe add some small cut bacon cubes as a contrast in flavor and texture. I think it could be nice with runny egg yolk, green onions and chiles, the usual fare heh.

Thus blood must be eaten or processed into goods like black pudding almost immediately after slaughter. Jewish blood taboos being imposed on American society aside, eating blood doesn't play very well with the extremely industrialized food systems set up with firms like Cargill, where they're shipping food all over the country and it might not be very fresh. Plus, it's a little dubious that one would even want to consume the blood of animals raised in horrendous factory farm conditions. Wanting beef that's pasture raised and grass-fed etc is always applicable, but especially so with the likes of blood or liver. tl;dr Americans are too poor for blood and offal, not the other way around
