Non-American here.

I thought all gumbo had two thickeners, roux and sassafras powder (IE filé). Three if you count the okra. When I've made it, that's how I did it. Also, rice. Had no idea potato salad was an option.

True. Most cajun families I know pass the file at the table for individuals to add to their bowl (or not). To be clear, it goes into the gumbo only as it's served.

yeah there are three different thickeners, but it's not unusual to just use two of them. I fucking hate okra because we grew it on our farm and it was a major pita to deal with so I just use roux and file, some people are sensitive to the taste of file so they use okra instead. also any smoked sausage will work fine. I've used kielbasa myself when there wasn't a convenient source of andouille.
