Stir-fry curry sauce is a piece of piss. Takes all of two minutes to put together.
Water, stock cube, sesame oil, mushroom seasoning, curry powder and cornflour, in that order. If you don't add the cornflour last, it won't mix properly and it will clump up. Anyway, shake that shit together in a bottle or jar, pour into a hot pan with whatever you just stir-fried and stir until the cube is dissolved then serve up.

Literally every Chinese take away curry dish (usually called something like curry X w/onion, curry X w/mushrooms or curry X w/vegetables) is made this way.

1/4 cup water
1 Tbsp ketchup
1 Tbsp rice vinegar
2 Tbsp sugar
1 tsp soy sauce
1 pat of butter
a few healthy shakes of ginger powder
a little garlic powder and black pepper
and 1 tsp of corn starch
Mix together in small pot and bring to boil while stirring

It taste exactly like the sweet and sour sauce you get at a Chinese takeout place (the thinner red kind)

you need 1 stick of room temperature butter
olive oil (optional but it helps get it to the right consistency)
garlic powder or finely grated fresh garlic
and salt

I fucking love corn syrup. Every morning I wake up and pour corn syrup into my coffee, complete with an oil based creamer and whole milk until it's noticeably more difficult to stir. Atop my breakfast of pop tarts and chocolate frosting--you guessed it--more corn syrup.

Yeah they were great, really thick crunchy breading too. The problem, if you could call it that, was that the breading would sometimes be like a shell, super stiff and sturdy but it didn't stick to the chicken, so it could break away in solid chunks and leave the bare breast beneath it. I like blackberry ketchup.

>4 large apples
>Onion and hot red pepper to taste
>2 cloves garlic
>120g brown sugar
>120ml malt vinegar
>2 whole cloves
>1 teaspoon allspice
>1/2 teaspoon cinnamon
>1/2 teaspoon nutmeg
It's really hard to fuck up, has a layer of blackberry, sort of tart flavor underneath what is otherwise comparable to a british "brown sauce", since that's really what it is, but instead of tomatoes, it's blueberries. Might sound gross but it's one of my favorites.

Not that hard to make, you cook the blackberries in a pot with the cloves, once they're cooked, mash them through a sieve to get rid of any giant particulates or seeds. slice the apples, onions, pepper, place them in a pot on med heat, add in the plums, add in the garlic. Let THAT cook, and once it's soft, toss it into the sieve and strain it for any large particulates.
Once you'd finished collecting juice from the cooked blackberries and other veg, drop it in another stew pot and simmer it, mostly to finish off the flavor of the onion and garlic, and reduce it just a little. Then, add the malt vinegar, brown sugar, allspice, nutmeg and cinnamon. Occasionally stir for about 20 minutes for things to finish off, then taste. Make adjustments, if flavors seem good (the heat will make the vinegar really pop in a way it wouldn't when cool/room temp so mentally adjust accordingly).
Chuck into sterile jars after.

Good on anything you'd put a brown sauce on.

1/2 Tbsp of buttermilk powder
1 squirt each of yellow and spicy brown mustard
1 Tbsp worchester sauce
1Tbsp of lemon juice
6 to 8oz of blue cheese

Freeze the block of blue cheese
Use the lemon juice and worchester sauce to reconstitute the buttermilk powder
add all ingredients into large bowl and mix
then use large hole cheese grater to grate the blue cheese into the bowl and gently fold into sauce
Refrigerate to chill and to let the flavors blend

Pan gravy, just cook some meat (a pork chop or something), pull it out, chop up some onion, throw that shit in, then deglaze the pan with some kind of cartoned broth or stock (I suggest beef broth or stock). Then, set it to simmer, the mix together corn starch and water to form a slurry, then add this to your simmering broth. Let it simmer until it reaches your desired thickness, then pour that shit over your meat, if you desire mushrooms, you can chop them up and cook them in butter before adding the stock to make a mushroom gravy.
