Coriander seed, 2tsp
Cumin seed, 1,5tsp
Peppercorns, 1tsp
Rice, 1tsp
Black mustard seed, 0,5tsp
Clove, 1-2 whole
Green cardamom, seeds from 1 pods
Fennel seeds, a pinch
Water, as needed
Tomato, 1 large
Yardlong beans, 300g
>string/green beans are fine, too
Ice, as needed
Onion, 1
Ginger, 1 thumb
Garlic, 1-2 cloves
Chilli, red, 1-2
>the long type; I think it's called cayenne
Frying oil, 50ml
Salt, as needed
Vegetable broth, 250ml
Curry leaves, 2
Eggs, 2 large
Good quality turmeric powder, 1tbsp

In a steel or iron pan, place all spices and toast on medium-low/low heat until cumin and fennel seeds begin to pop then up the heat and, using a wooden spoon, stir quickly until the smell of toasted spices fills the air.
Off the heat and tip spices out into a mortar.
Using clean fingers, toss the spices about until cool then set aside.
Set a pan of water to boil; meanwhile, as it heats up, score the tomato on the bottom in an X-pattern and cut the beans to serving sizes.
Blanch the tomato and beans for two minutes then remove and shock in ice water.
Peel and crush the tomato (I like to keep the skins in, but feel free to toss them if you prefer) by hand and place into a pot.
Peel and slice the onion and place into the pot.
Peel and mince the ginger and garlic and place into the pot.
Slice the chilli and place into the pot.
Add the oil and set the pot to high heat.
When fragrant, salt generously and saute until the tomato liquids have reduced out.
Add a little water to help the onions to soften and reduce back out again.
Add the beans and saute until about a minute then add broth and curry leaves.
Simmer until reduced by half; meanwhile, pound the spices to powder.
Beat eggs with spices, including turmeric.
Beat reduced bean-mixture into the eggs 1 tbsp at a time until about half of the mixture has been added, thus tempering them.
Off the heat and add the tempered eggs to the pot, stirring continuously until thickened and creamy.
Serve with other dishes and rice or appam.

i do tiny shreds of turkey bacon, onion, peppers, garlic, maybe some chopped up spinach and then steam about 4-6 scrambled egg whites on it all. salt and pepper with a little drizzle of hot sauce does it right quick. throw a few little grape tomatos and a few slices of toast and you'll have hair on your chest in no time.
